he inaugural vintage of Joseph Family Vineyards Cabernet Sauvignon was harvested the second week of October of 2003. Our notes remind us that the late summer was cool, calling for longer hang times as the fruit reached optimal maturity. We picked 6.8 tons, yielding just under 2 tons per acre at 24.6 brix, TA 3.90 and pH 3.73. Our total production was about 450 cases.
The 2003 was made in a classic Bordeaux style, with extended maceration and
aged in 65% new french oak for 20 months. The wine has developed a sound
tannic structure while retaining a soft mouth and a smooth finish across
the palate. We are reminded of warm floral qualities redolent with flavors
of cassis and stone fruit. This wine can be enjoyed immediately, and
with its wonderful structure, will only get better in 5-10 years. For
